Now he presides over the kitchen in a tiny house that hosts his modern menu of handcrafted food from select ingredients. Rojas makes his own ricotta and condensed milk syrups, cures his own ham, pickles mustard seeds and seeks out rare cuts of prime beef and local produce. Try bacon-cheddar buttermilk waffles at brunch, roast chicken with purple polenta at dinner. Smart wine and savvy service, too.
