Pensacola chefs took the lead in the Southern food revival at least a decade ago.

» At Jackson's Steakhouse, which began in 1998, chef Irv Miller always includes big helpings of Vidalia onions and slab bacon and uses cornmeal to tempura fry lobster.

» Jim Shirley's Grits a Ya-Ya, topped with shrimp, bacon and the whole Southern cupboard are still a signature at The Fish House. "Sunday suppers" can be chicken-fried steak or fried catfish with butter bean gravy.

Miami

» At Mahogany Grille, which took an old soul food restaurant upscale in 2005, chef Gregory Brown serves pan-fried lobster tails, stewed conch and Creole shrimp as well as sweet-potato pecan cheesecake.

Winter Park

» Last year, Southern flavors took over space that once housed Winter Park's grand old Continental landmark, Le Cordon Bleu. Now the Boathouse (and Drake's Bar) draws big crowds for pork chops as well as fish, with chipotle in the pimento cheese, remoulade for the fried green tomatoes, house-made pickles and creamed corn casserole.
