The new culinary supersplurge in South Florida is Mauro Colcagreco, Argentine-Italian, trailing three Michelin stars from Mirazur in the Riviera, just named No. 1 in the world. His first U.S. stop? The Four Seasons in Palm Beach. His crew works with a tandoor oven, rotisserie and grill for pure, simple delights like salt-crusted whole fish or tomato/peach carpaccio. Still over the top: $100 veal shank for two and a certified “water sommelier.”
