Chef Melissa Donahue-Talmage gives beach-goers citified sophistication from New Orleans and Manhattan. She can whip up thyme and mascarpone for scallops and risotto, confit-fried rice for duck breast or squid ink tostadas. As a bonus, all entrees come in half portions. Lunches are smart, cocktails clever and desserts a dream (banana pecan strudel!). Vacationers should go more than once.
