We all saw it: that video of a robot server having a meltdown in a California restaurant.

It’s hard to forget the image of the dancing humanoid who, in the middle of service at a Cupertino hot pot restaurant, completely loses it: Plates are smashed and chopsticks and food go flying as a group of employees try to subdue the robot, the look of amusement on their faces quickly turning to concern.

The viral interaction was good for a few chuckles, but it also made it clear that artificial intelligence in restaurants is becoming increasingly common, whether in the form of misbehaving robots or something else.

The technology powering large language models and machine learning is quickly evolving, and AI has already made a significant headway in the restaurant and hospitality market, including in Tampa Bay.
