Long before he achieved his bakery dream, Johnny VanCora was a high school bread dealer. He’d tuck home-baked loaves into his backpack and wait for word from his regulars. Sometimes they’d text him in the middle of class at William T. Dwyer High School, where he was a student in the International Baccalaureate program. He’d excuse himself, he says, rush out to the parking lot and make the transaction: cash dough for sourdough.
