Guests at the new Mayfair Hotel and Spa in Miami's Coconut Grove, which opens soon, will arrive to a complimentary mojito and anise-scented towel. Once settled in, they'll be able to relax by the rooftop pool in a private cabana, complete with an iPod and a personal mist attendant who will spritz them with cool water every 30 minutes. Rooms include a 42-inch plasma TV and two-person Japanese soaking tub on private 180-sq.-ft. balconies.

San Francisco-based Kimpton Hotels, a lifestyle hotel group, is spending $10 million to renovate and transform the old Mayfair House Hotel into the ultimate hideaway. This is Kimpton's first foray into Florida, says Mayfair general manager Hans Bratt. A second, the Ritz Plaza on South Beach, will open later this year. Rates at the Mayfair start at $279 for a weekend night during the busy season (January through April).
